Quick & Easy Avocado Salsa

I find myself looking for ways to bring a little piece of summer into the home during the long months of winter. Especially when the sun won’t come out for days and the land is whitened by snow. So what does one do when they are longing for summer in the heart of January?

One makes salsa. Because what says summer more than freshly made salsa?

We were grilling chicken (yes we still bbq even when there is snow on the ground) and I wanted to dress it up a little. This avocado salsa did just the trick. And it made me happy, so I wanted to share! Just in case you were having the winter blues as well.

Avocado Salsa

  • 1 medium onion
  • 1 bell pepper
  • 2 avocados
  • 10-12 cherry tomatoes
  • 1 stalk celery
  • 1 lime
  • sea salt
  1. Dice the onion and bell pepper and combine in a medium sized bowl. Slice the cherry tomatoes and add to the bowl.
  2. Cut the celery stalk lengthwise. Then thinly slice and add to the bowl.
  3. Quarter the lime and squeeze juice over the contents in the bowl. Sprinkle with sea salt and toss so everything is mixed well.
  4. Add the avocados last and right before you’re ready to serve. Cut your avocados lengthwise and remove the pit. Remove avocado meat and dice. Then fold into your salsa carefully so that you don’t mash.
