My favorite meal is breakfast.
In our house, serving breakfast isn’t just for the morning however. Because that would just be boring. No, we reserve the right to serve breakfast for any meal. Sometimes that’s in the middle of the day as brunch on Sunday, and at least once a week it’s what we have for supper.
Farm fresh eggs. Bacon or sausage grown right here on the farm. Homemade sourdough. And potatoes dug fresh from the garden. Why on earth would anyone leave these things to only one meal? Who made that rule, anyway?
Sometimes, when you want to shake things up a bit, it’s even better when you throw all these things together in a skillet and serve it as a good old fashioned hash. Now that’s what I’m talking about!
Will there be breakfast in heaven? I hope so.

Old Fashioned Skillet Hash
- Red or Yukon Potatoes
- 1 lb sausage
- 1 medium onion
- 2 heaping spoons of minced garlic
- Thyme
- Black pepper
- Sea salt
Lightly brown sausage in a hot iron skillet, but don’t overcook. Drain and then set aside.
Dice up potatoes. In the same skillet, add potatoes and a little olive oil and cook until they start to get tender. Add diced onion after about 10 minutes. Then add sausage.
Stir potatoes, making sure to break up where it starts to stick on the skillet bottom. Sprinkle with thyme, black pepper and sea salt to taste.
Best served with a fried egg.
