Cut pumpkin in half and smoke at 250 degrees for 2 hours or until flesh is soft. Then let fully cool.
Using a large spoon, remove seeds and goop in the middle. Then remove 2 cups of cooked pumpkin and place in a clean bowl.
Add all ingredients to the pumpkin and mix well until completely incorporated.
Warm oven to 425 degrees.
Pour pumpkin batter into your pie shell and bake at 425 for 10 minutes.
Reduce heat to 350 degrees and bake an additional 20 minutes, or until pie is firm. Don't over bake.
Let pie sit on a cooling rack until completely cool. Then serve with whipped cream.
