Smoked Pumpkin Pie

Ingredients
  

  • 2 cups smoked pumpkin sugar pie, Jarrahdale or baking squash
  • 2 large eggs
  • 1 can condensed milk, sweetened
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 2 tbsp Jameson Whiskey
  • 2 tbsp raw honey
  • 1 tbsp vanilla

Instructions
 

  • Cut pumpkin in half and smoke at 250 degrees for 2 hours or until flesh is soft. Then let fully cool.
  • Using a large spoon, remove seeds and goop in the middle. Then remove 2 cups of cooked pumpkin and place in a clean bowl.
  • Add all ingredients to the pumpkin and mix well until completely incorporated.
  • Warm oven to 425 degrees.
  • Pour pumpkin batter into your pie shell and bake at 425 for 10 minutes.
  • Reduce heat to 350 degrees and bake an additional 20 minutes, or until pie is firm. Don't over bake.
  • Let pie sit on a cooling rack until completely cool. Then serve with whipped cream.
